Apricot Sweet Potatoes Recipe
Ingredients:
- 4 - Sweet Potatoes, peeled and cubedĀ
- 1 - 15 oz can Apricot Halves, reserve juice
- 1/2 cup - eSutras Walnut Halves, Raw Organic
- 1 tablespoon - Butter
- 1 1/4 cups - Organic Sugar
- 1 - Orange Rind, grated
- 1/8 teaspoon - Cinnamon Bark Powder
- 1 1/2 teaspoon - Cornstarch
- Pinch of Clove Salt
Directions:
- Cubed sweet potatoes and place in a casserole dish.
- Place apricots and walnuts on top of sweet potatoes. Set aside.
- In a sauce pan, combine apricot juice, butter, sugar, orange rind, cinnamon, cornstarch and salt. Heat on stove top medium heat for approximately 3 minutes or until sauce thickens. Stir often.
- Pour sauce over sweet potatoes, apricots and walnuts.
- Bake in the oven for 25 minutes at 375 degrees.
