Wild chicory can be seen growing alone roadsides and in fields throughout the midwest. It's easily noticeable by its pretty, lavender–colored flowers and tall stalks. Chicory root is most commonly used in a ground and roasted form as a coffee substitute or additive. It provides a naturally caffeine–free alternative to traditional coffee.

Chicory root contains soluble dietary fiber, which acts as a gentle laxative and promotes healthy bacteria in the digestive tract. Chicory root contains vitamin C and a powerful antioxidant.

Prepare a tea by pouring boiling water over 1 tablespoon of ground and roasted chicory root. Let steep for 5 to 7 minutes before straining and drinking. To mix with coffee, use a 2 parts coffee and 1 part chicory mixture and brew.
